Skinny Chocolate Chip Cookie Pie


So I am sure you can tell by now that I LOVE chocolate! However, I also love to stay fit and maintain a slim figure. This recipe allows me to "have my pie and eat it too", so to speak. WARNING, it's warm, gooey, chocolaty goodness will make it very hard to stop at just one piece! 

Once again, I am going to have to ask you to trust me on this one. I know that chickpeas (or garbanzo beans) may sound like a strange ingredient for a dessert to most people, but I assure you that you will not taste the beans in the finished product. 

Another plus about this recipe is that it takes minutes to throw together and only dirties two dishes (including the spring-form pan).

Skinny Chocolate Chip Cookie Pie 

(Serves 12)

(slightly adapted from Chocolate Covered Katie)



Ingredients:
  • 2 cans chickpeas (rinsed and drained)
  • 1/4 cup unsweetened applesauce
  • 3 tablespoons canola oil
  • 2.5 teaspoons pure vanilla extract
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup Splenda brown sugar blend (or plain sugar/brown sugar or sweetener of choice)
  • 1 cup quick cooking oats
  • 1 cup bittersweet chocolate chips
Method:
  • Pre-heat oven to 350 degrees Fahrenheit and grease a 10 inch spring-form pan
  • Blend everything except the chocolate chips in a food processor, then blend until no lumps (or chunks of chickpeas) remain
  • Mix in chocolate chips and pour into the 10 inch spring-form pan
  • Cook for 40 min and do not remove from pan until it has cooled for at least 10 minutes
* I HIGHLY recommend topping this pie with ice cream and chocolate sauce... Delightful!!!! 



NUTRITIONAL INFORMATION 
(not including the ice cream and chocolate sauce pictured)
  • 261 Calories
  • 43 grams Carbohydrates
    • 5 grams fiber
    • 24 grams sugar
  • 10 grams Fat
  • 6 grams Protein


Someone pointed out to me that this may be too many calories for people following a strict, low-calorie diet. If you want to reduce the calories more you can try the following:


  • replace the 3 tablespoons of canola oil for 3 tablespoons applesauce
  • replace the brown sugar with a zero calorie sweetener (such as baking stevia or splenda)
  • reduce the chocolate chips by half (there are quite a few chocolate chips, so hopefully you will not miss them too much)
This is the new nutritional information with those changes:
  • 135 Calories
  • 25g Carbohydrates
    • 8g Sugar
    • 4g Fiber
  • 4g Fat
  • 6g Protein

  2. Can you also put the nutritional info. for just a slice of the pie without ice cream and choco sauce? As it stands there, it's not very "skinny"! Thanks :)

    1. Hi misschel! Actually, the nutritional information posted is not including the ice cream and chocolate sauce. I know it is a little high of a calorie count for some people, so this is how you can make it lower:
      - substitute the olive oil for more apple sauce
      - substitute the splenda brown sugar blend for regular splenda or stevia

      These changes would bring the calories down to 182 per slice. Also, you could reduce the chocolate chips by half which would bring down the calories to 135 per slice.
